Glittering Princess

I designed this cake for a lady's 90th birthday - her daughter, who commissioned it, was my very favourite type of client; she said she wanted rich jewel colours and that the design could be totally up to me - lovely!. The birthday girl didn't want her age mentioned (what lady does?) and was emphatically not your 'typical' older lady.

I loved making this cake and just wish I could get my camera to capture all the shimmer and sparkle of the finished piece.

The top tier is 6" and is a cinnamon sponge with chunks of dark chocolate, layered three ways with chocolate ganache (a meltingly luxurious filling made with just chocolate and double cream.) The bottom tier is 8" and is a spiced carrot cake with lemon buttercream layers.
